By combining tradition from the old world with innovation from the new world, we at Sergio Revell Tequila have united the best of both to produce our premium tequila. Our tequila is infused with oranges to provide a distinctive superior flavor, benefiting from the combination of both lowland and highland regional agave plants, which deliver an award winning profile.

HARVEST

We require that the raw sugar content of freshly cut agave we purchase contain at least 21 Degrees brix. We prefer and seek agave with 22 – 28 brix sugar content. 29+ degree brix is possible for agave harvested towards the end of May (end of dry season) just prior to rainy season.

AGAVE

We select agave plants with a minimum of 22-sugar brix per agave. This ensures the best sugars. We mix our agave plants from the highlands and the lowlands to give us our base profile at the factory. While others just use one particular region, we found that mixing both regions produces the profile that has received so many awards. We purchase only agaves that are 8 to 12 years old.

DISTILLATION

We then use double distilled and later chill-treated processes for our tequila. As you may not know, very few tequila factories employ this special chill treatment. This technique assures the tequila does not get cloudy in extreme temperatures. After being chill treated, the tequila goes through an oxygenation process, which ensures smoothness; the longer we oxygenate the smoother the product.

COOKING

Our cooking methods are stone ovens “hornos” as they call them. We cook our agaves between 24 and 48 hours using steam. The molinos then crush the agave and extract all the juices and sugars, which then goes into fermentation. Once in fermentation we let it sit for 48 to 72 hours. We ferment our tequila in 20 33,000-liter stainless steel tanks.

Our tequila possesses unique qualities due to use of water we obtain from the volcano, this water runs through our distillery so we utilize it in our processes. We use an osmosis system to filter out any impurities it might contain. Our distillery is also the most decorated distillery for quality receiving multiple awards in the US and globally.

FERMENTATION

We utilize a medium/slow fermentation system. Average fermentation requires 48- 72 hours. Each of our fermentation tanks has a capacity of 33,000 liters or approximately 7926 gallons.
